In a pan, pour in the single cream and the egg yolks. Mix with a wooden spoon until all the eggs are broken. Then add the suar and cinnamon and cook thouroughly bringing the mixture to a boil and leave it on a boil for 3-4 minute. Once you have done this, leave your mixture to cool down for 10-15 minutes. If you have an ice-cream machine then you can use it, if you don't then pour your mixture into a bowl and put it in the freezer, if you are doing this then every 15-20 minutes you must stir your ice-cream. Take it out of the freezer at keast 10 minutes before serving. Best served with an apple pie!
