Blueberry Muffins
Ingredients
- self-raising flour 150g
- baking powder 2 1/2 tsp
- sugar 2 tbsp
- salt 3/4 tsp
- margarine 150g
- 2 eggs, well beaten
- 1 1/2 cups fresh or frozen blueberries
Method
Preheat the oven to 400 degrees. Lightly grease a muffin tin. In a large bowl, combine the flour, baking powder,
sugar, and salt. With a pastry blender or two knives, cut in the butter or margarine make a well in the center.
In a small bowl, combine the eggs and milk; add it all at once to the well in the flour mixture, stirring it until
it is just moist. Fold in orange zest and blueberries. Bake for 25 to 30 minutes or until golden brown. Remove from oven and immediately remove from pan.
Serve warm or at room temperature.
SOME TOP TIPS FOR MAKING YOUR BLUEBERRY MUFFINS
- If you are using fresh blueberries, dust them lightly with flour; this helps prevent the blueberries from "bleeding" into the muffins.
- If using frozen blueberries, add them frozen to the batter; this will help prevent them from "bleeding" our their juices.
