To make the pastry, put the flour and salt into a bowl and rub in the butter until the mixture looks like fine bread crumbs. Stir in the caster sugar, then stir in the egg and enough water to bind the mixture together. Knead the mixture lightly on a floured surface, then roll out 2/3 of the pastry and use it to line the pie dish. Now you need to peel, core and thinly slice the apples, put them in a bowl and sprinkle them with lemon juice. Layer the apples, sultanas, brown suagr, cinnamon and nutmeg into the pie dish. Roll out the rest of the pastry to make a lid for your pie. Put the lid on your pie and press the edges. Cut off the excess pastry, using your pie dish as a guide. Bake at 200 degrees gor 30 minutes, until golgen brown. Best served with cinnamon ice-cream!
